The hydrophobic interaction between macroscopic surfaces

The aim of this paper is to review our current level of knowledge of the interaction between hydrophobic surfaces immersed in water. The strong attractive forces observed between such surfaces have generally been referred to as “the hydrophobic interaction”. Although the precise origin of this force has not yet been determined, we will examine recent experimental studies and relate them to other phenomena like cavity formation and repulsive hydration forces.
